Paneer Do Pyaza is a delicious North Indian vegetarian dish that combines the creamy goodness of paneer (Indian cottage cheese) with the rich flavors of onions and a medley of spices. It's a perfect dish to serve four hungry individuals. Here's how you can make Paneer Do Pyaza for four persons:

Ingredients:

For the Paneer Marination:

  • 250 grams of paneer, cut into cubes
  • 1/2 cup thick yogurt
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste

For the Gravy:

  • 2 large onions, thinly sliced
  • 1 large tomato, finely chopped
  • 2-3 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 teaspoon garam masala
  • 2 tablespoons cooking oil or ghee (clarified butter)
  • 1/2 cup fresh cream
  • Fresh coriander leaves for garnish
  • Salt to taste

Instructions:

  1. Marinate the Paneer:

    • In a bowl, combine the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt.
    • Add the paneer cubes to the marinade and gently coat them. Allow the paneer to marinate for at least 30 minutes.

  2. Prepare the Gravy:

    • Heat the oil or ghee in a deep pan or skillet over medium heat.
    • Add the cumin seeds and let them splutter.
    • Add the thinly sliced onions and sauté them until they turn golden brown. This may take around 10-12 minutes.

  3. Spice it Up:

    • Once the onions are caramelized, add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate from the mixture.
    • Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Stir well and cook for a few more minutes until the spices are fragrant.

  4. Add the Paneer:

    • Now, add the marinated paneer along with the marinade into the pan. Stir gently to combine the paneer with the flavorful gravy. Cook for 5-7 minutes on low heat.

  5. Finish with Cream:

    • Pour in the fresh cream and mix it into the gravy. Let it simmer for another 2-3 minutes, allowing the flavors to meld together. 

  6. Garnish and Serve:

    • Garnish Paneer Do Pyaza with fresh coriander leaves.
    • Serve hot with steamed rice, naan, or roti.
